Steak sandwich


Ingredients

  • Skirt steak cooked sous-vide or other


  • Pizza dough


  • Garlic

  • Butter

  • Mild provolone cheese

  • Baby arugula

  • Marzetti vinaigrette lemon dressing (target)



Instructions

  1. Cook and slice steak thinly

  2. Divide pizza dough into sandwich size rolls and let proof at room temp on parchment paper

  3. Preheat a Dutch oven on 425 for 1 hour

  4. Place proofed rolls in Dutch oven for 12-15 mins covered then uncover for a few mins if not brown enough.

  5. Take out and let rest on a rack (you can temp the center of the roll looking for 190 it is fully cooked)

  6. In a small pot on stove melt 2 Tbsp butter and 1 crushed garlic clove together

  7. Cut roll in half and brush both sides with the garlic butter and put a slice of provolone on each side, and broil till cheese is nicely melted

  8. In a separate bowl add the baby arugula and dressing and toss together so it is all coated

  9. Assemble the sandwich laying the sliced steak on the bottom followed by the dressed arugula and top
