Blueberry Wings (breaded)


Ingredients

  • Chicken wings

  • 25% AP flour

  • 75% Corn starch

  • AP seasoning

Sauce

  • Blueberry jam (good quality)

  • Splash of apple cider vinegar

Instructions

  1. Put wings in a zip-lock bag with AP seasoning (salt, pepper, garlic powder, msg) and refrigerate overnight.

  2. Mix corn starch and flour in a bowl and toss wings in to coat thoroughly.

  3. Heat frying oil to 350F and fry till wings hit around 165F internal

  4. Take out to cool on a rack about 10 mins

  5. Then turn oil up to 400F and re fry wings till golden brown

  6. Mix the blueberry jam with a splash of vinegar to loosen the jam so it coats the wings.

  7. Toss wings in the sauce and serve immediately
