Ingredients
Chicken wings
25% AP flour
75% Corn starch
AP seasoning
Sauce
Blueberry jam (good quality)
Splash of apple cider vinegar
Instructions
Put wings in a zip-lock bag with AP seasoning (salt, pepper, garlic powder, msg) and refrigerate overnight.
Mix corn starch and flour in a bowl and toss wings in to coat thoroughly.
Heat frying oil to 350F and fry till wings hit around 165F internal
Take out to cool on a rack about 10 mins
Then turn oil up to 400F and re fry wings till golden brown
Mix the blueberry jam with a splash of vinegar to loosen the jam so it coats the wings.
Toss wings in the sauce and serve immediately
