Steak red chimichurri


Red chimichurri:


Ingredients

  • 1 cup roasted red peppers chopped

  • ½ cup chopped fresh parsley

  • ¼ cup red wine vinegar

  • 2 tsp paprika

  • 5 cloves garlic

  • ¼ cup fresh lemon juice

  • ¼ tsp black pepper

  • ½ tsp salt

  • ½ tsp Korean chili flakes (or regular chili flakes)

  • ½ cup good extra virgin olive oil


Instructions

  1. Put roasted red peppers, fresh parsley, garlic, chili flakes, paprika and vinegar into a food processor or blender.

  2. Add rest of ingredients and mix together with a spoon. (Do not blend the olive oil)

Creamy horseradish:


Ingredients

  • 1 cup sour cream

  • 2 tbsp prepared horseradish

  • ¼ tsp black pepper

  • ¼ tsp salt/ add to taste



Steak:


Ingredients

  • 2 small ribeye steak or skirt steak

  • Coarse kosher Salt and pepper


Instructions

  1. Pat steak dry with paper towels

  2. Generously cover on all sides with salt and pepper

  3. Grill till internal temp of 125f let rest for 5 mins
