Scallion Pancakes

Ingredients

  • 1 cup cake flour

  • 1.5 cups AP flour

  • 3/4 cup boiling water

  • 1/4 cup room temp

  • 1 Tablespoon sugar

  • 1 teaspoon salt


  • 1 large bunch of scallions sliced very thin

  • Chinese spices

  • Roux- equal parts olive oil to flour


Instructions

  1. Combine the flour, water, sugar, salt in a bowl and kneed till smooth

  2. Rest 1 hour

  3. Divide into equal pieces

  4. Roll out as flat as possible

  5. Spread roux evenly on the top then sprinkle the spices over and spread out a handful of chopped scallions.

  6. Then do one of the rolling methods

  7. I like the one where you roll from top and bottom and meet in the middle, then roll opposite directions from each end, then smush together

  8. Then when ready to cook

  9. Heat a pan on medium high heat with a good layer of oil

  10. Roll out the pancake as thin as possible and fry in the pan till golden brown on both sides
