Ingredients: – 1 lbs of chicken wings
Brine:
- 4 cups water roughly (enough to cover chicken)
- 1/4 cup salt
- 1/2 cup sugar
- 2 Tbsp MSG
Breading:
- 1 cup AP flour
- ¼ cup cornstarch
- 1 Tbsp salt
- 1 Tbsp MSG
- 1 Tbsp sugar
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp paprika
Buffalo sauce:
- ½ cup Franks buffalo sauce
- 1 Tbsp Marie’s chunky blue cheese dressing
- ^This is just an estimation on ratio, go by color^
Instructions:
- In a bowl add wings and brine solution, refrigerate for 6-8 hrs.
- Drain chicken wings.
- Add breading ingredients in a large bowl.
- Make a batter with ½ cup of breading mixture with a little water, dip chicken in this first.
- Then toss chic ken wings in the dry breading mixture and firmly press the mixture into the wings, then set on a rack on a baking sheet tray.
- Wait 1-2 hours until the flour on the chicken is wetted through.
- Deep fry at 350-degree F for about 4 mins or until very lightly golden then set on wire rack to dry.
- After 15 mins resting on rack heat oil back up to 400-degree F and add all the chicken back in cook for about 4 mins or until golden brown, then set on wire rack to dry.
- Add buffalo sauce ingredients to large bowl mix to combine, and toss your wings in sauce.
