Chinese Honey Butter Chicken

Ingredients:

Sauce:

  • 1/4 cup honey

  • 1.5 stick butter then clarify it

  • 1/4 cup white sugar

  • 1/4 cup soy sauce

Chicken: (can make extra chicken and batter, freeze after first fry)

  • 2 Lb boneless skinless chicken thighs, cut into bite size pieces

  • 2 cups water

  • 4 Tbsp sugar

  • 2 Tbsp salt

  • 3 cloves garlic

  • 3 inches of ginger

Batter:

  • 1 cup flour

  • 1 cup cornstarch

  • 1 teaspoon baking soda

  • 1 cup ice water, or as needed for thin batter.

Directions: Double fry is Necessary!!

  1. Soak chicken in brine for at least one hour.

  2. Drain brine and remove garlic and ginger, then add the batter ingredients mix.

  3. Set frying oil to 275-degree F for first frying, till light brown.

  4. Set aside till all is done.

  5. Set frying oil to 375-degree F for second frying, till dark brown.

  6. Set aside till sauce is ready.

  7. In a skillet 1.5 sticks of butter, remove cream floating on top.

  8. Add the honey, sugar, and soy sauce.

  9. Cook till sugar is all melted

  10. Add finished chicken to sauce and coat.
